  • In the Kitchen

    This spectacular soft white winter wheat, almost pure white in color is suitable for: pastries, cookies, pancakes, and quick bread.  This low protein flour will not work well for yeasted and sourdough bread, due to it's low potential to form strong gluten strands.

    On Sunday July 24th, 2022 we made pancakes made with Goldcoin flour. Smooth, fluffy, and golden brown. Delicious! This is very possibly the first pancakes that anyone has made from Goldcoin wheat in a century. Worth the wait!

  • In the Field

    Goldcoin is the first soft wheat we ever grew, and it sure is special! White wheats are unusual, even today, and heritage white wheats are even rarer. The berries are beautifully plump and golden in color.

     

    Our original interest at Anarchy Acres was in hard red wheats, and it was only by chance that Charlie obtained an archival sample of Goldcoin seed from the USDA collection in 2016. Since then, the wheat has really caught our interest. It is an awnless type of wheat, with very tall and strong stems. Goldcoin was selected from a field of Diehl Mediterranean wheat by a New York farmer in the late 19th century. The seed was improved by simple selection and the new variety became popular in several states, including a few fields in Wisconsin.

    At harvest time, the color and texture of Goldcoin is spectacular. The seed heads have indescribable tones, and the upper stems often turn purple. The berries are nearly white, and soft. After growing out our sample for eight years, Goldcoin flour is commercially available for the first time in over a century!
